Expertise
For over thirty years, we have been studying and practicing plant-based nutrition with passion and dedication.
We have observed how what we eat truly affects our well-being, including through direct experience of the effects of individual ingredients.
In the kitchen, we combine well-being with satisfaction of the senses, because for us, food must be both nourishment and pleasure.
Audacity
We opened in 1994, in the historic Quadrilatero Romano district.
At the time, it was not yet a tourist destination or nightlife hotspot, but one of the most challenging neighborhoods. In those years, talking about vegan and macrobiotic cuisine seemed almost like a challenge. Nevertheless, we believed in it, and over time, a community curious and interested in food and well-being formed around us.
Independence
We started and have grown relying solely on our own strengths, without external push or special support.
Our independence is not only political, but also intellectual: we like to think for ourselves. We do not pursue symbols, labels, or affiliations: we believe that value is demonstrated through actions.
This is the freedom that allows us to be authentic, consistent, and close to people.
